The Journeyman Meat Cutter is responsible for meeting daily production needs and quality standards in the meat cutting and preparation of meat. The role receives, stocks, cuts, grinds, wraps, weighs, prices, and merchandises meat department products. It also orders and stocks pre‑packaged deli items and frozen products, packages trays, labels items, rotates stock, and ensures proper inventory control. The position handles special customer requests and provides product information.
Key Responsibilities- Locate and remove meat portions from walk‑in freezer or refrigerator, placing them on a cart for cutting.
- Use knives and band saw to prepare specific cuts of meat from larger portions.
- Set machines for proper pricing and labeling of meat to be wrapped.
- Arrange packages on display and remove out‑of‑date or damaged packages.
- Clean and sanitize work areas, equipment, tools, and floors.
- Operate electric tow motor to move pallets from receiving to storage.
- Instruct, supervise, and direct Apprentice Meat Cutters as required.
- Perform other duties as assigned.
- Ability to comprehend and follow specific instructions.
- Ability to perform simple and repetitive tasks.
- Ability to maintain work pace appropriate to workload.
- Knowledge of meat (primal cuts), poultry, fish, and pre‑packaged products.
- Awareness of seasonal/holiday product needs and cooking trends.
- Understanding of food safety and hazardous materials regulations.
- Proficiency in use and care of professional cutlery, saws, tenderizers, grinders, wrapping equipment, and related tools.
High School Diploma or G.E.D., or equivalent job experience.
Prior meat department experience, including cutting of meat, is required.
Availability to work a variety of required retail hours; must operate department equipment such as grinder, pallet jack, saw, scales, register, etc.
Physical & CompetenciesPhysical: Ability to sit, stand, walk, kneel, stoop, use stairs, reach, pull, and lift objects; may lift up to 50 lbs.

Hiring pay range: $25.39 – $25.39 per hour.
