Physical Demands

Must be physically qualified to perform assigned duties as evidenced by a physician’s certificate.

Duties and Responsibilities
  • Supervise the operation of a large institutional bakery or support a higher rank baker in a large pastry bakery.
  • Supervise bakery personnel of lower rank.
  • Mix, scale, divide, shape, fill, bake, fry, glaze, ice, and decorate breads, cakes, and pastries.
  • Assist subordinates in pastry, ice cream or other dessert manufacturing using large automated equipment.
  • Operate a large automated manufacturing unit when higher rank baker is absent.
  • Requisition needed materials and supplies.
  • Sanitize the area and maintain bakery equipment.
  • Keep records and make reports.
  • Perform related work as required.
Required Qualifications
  • Knowledge of large‑scale baking operations, methods, and materials.
  • Knowledge of baking ingredients, dough reactions, fermentation, and food safety.
  • Ability to plan, layout, and supervise production of breads, rolls, biscuits, pastries, cakes, and ice cream.
  • Ability to follow and modify formulas.
  • Ability to operate bakery equipment and prepare commercial volume baked goods.
  • Educational requirement: completion of eight school grades or equivalent.
  • Experience:

    employment as a baker or pastry cook in a large‑scale environment.
