Must be physically qualified to perform assigned duties as evidenced by a physician’s certificate.
Duties and Responsibilities- Supervise the operation of a large institutional bakery or support a higher rank baker in a large pastry bakery.
- Supervise bakery personnel of lower rank.
- Mix, scale, divide, shape, fill, bake, fry, glaze, ice, and decorate breads, cakes, and pastries.
- Assist subordinates in pastry, ice cream or other dessert manufacturing using large automated equipment.
- Operate a large automated manufacturing unit when higher rank baker is absent.
- Requisition needed materials and supplies.
- Sanitize the area and maintain bakery equipment.
- Keep records and make reports.
- Perform related work as required.
- Knowledge of large‑scale baking operations, methods, and materials.
- Knowledge of baking ingredients, dough reactions, fermentation, and food safety.
- Ability to plan, layout, and supervise production of breads, rolls, biscuits, pastries, cakes, and ice cream.
- Ability to follow and modify formulas.
- Ability to operate bakery equipment and prepare commercial volume baked goods.
- Educational requirement: completion of eight school grades or equivalent.
- Experience:
employment as a baker or pastry cook in a large‑scale environment.
