This postdoctoral project will focus onthe food and beverage quality through a well-known class of compounds: the biogenic amines (BAs). BAs are recognized as a risk factor for the health of consumers. The main purpose of this project is to determine how much people are exposed to the risk of being intoxicated by the everyday diet and association of foods with the presence of BAs.
Little literature was produced on this topic, and even from a clinical point of view, little information is available for both the scientific community and people. Recent data suggest how not suspected BAs are any way involved in intoxications or allergies since symptoms are conducible to these pathologies. Today, BAs intoxication is mostly related to a little class of fermented products or fresh animal origin food, while research constantly gives us a richer database of new sources of vegetable origin from all over the world.
However, up today the legal limits are set only for histamine in fishes and fishery products
The research will address the following three key questions:
to study on not suspected source of BAs, as potentially involved in intoxications or allergies
to determine how much people are exposed to the risk of being intoxicated
to extend the legal limits, since they are set only for histamine in fishes and fishery products
The project aims to:
advance knowledge in life science and biological science;
introduce innovative theoretical and/or methodological perspectives;
strengthen interdisciplinary and international approaches;
contribute to addressing relevant scientific and societal challenges.
How will you carry out your work?
Methodologically, the project will adoptan integrated and multidisciplinary approach combining:
The redaction of a consistent database of items (food and beverages) by means of ultra-high efficiency liquid chromatography (HPLC) official method.
The assessment of an ad hoc HPLC method for unexplored matrices.
Data management and all statistical procedures will be carried out on a dataset of adequate numbers of observations and quantitative and qualitative variables. Before any statistical analysis, the quantitative variables of the dataset will be scaled using the min-max transformation. Multivariate statistical classification was performed using partial least square discriminant analysis (PLS-DA) and support vector machine (SVM).
The assessment of the exposure to biogenic amines will be carried out by the probabilistic estimation (Monte Carlo simulation technique with 10,000 iterations).
These methods will ensure scientific rigor, originality, and a high level of ambition.
The selected fellow will be encouraged to progressively develop an independent research profilewithin this framework.

The project will be supervised by Prof. Maria Martuscelli , an established researcher with strong international experience in Life Science (Biology And Biological Sciences). Prof. Martuscelli has an active research profile in biocompounds and system modelling with demonstrated expertise in food biotechnology, and is strongly engaged in international research networks.
