The overall objective and purpose of the Food and Beverage Manager are to oversee floor coverage in the outlets and assist the serving staff in the restaurant, lounge, and in-room dining/pool service. The incumbent is responsible for supervising Food and Beverage outlets, ensuring our guests receive the ultimate dining experience. They are to provide inspiring and strategic leadership while directing the Food and Beverage department's activities in support of the mission, core values, and goals established by the company.
CORERESPONSIBILITIES
- Supervises daily shift operations.
- Ensures Grand Performers comply with appearance standards.
- Schedule’s dining reservations and arranges parties or special services for diners.
- Inspects kitchen and dining areas and kitchen utensils and equipment to ensure sanitary standards are met.
- Requisition s and inspects food, supplies, and equipment to maintain stock levels and ensure quality standards are met.
- Ensures compliance with all food & beverage policies, standards, and procedures.
- Maintains service and sanitation standards in restaurant, bar/lounge, and room service areas.
- Acts as the guest service role model for the restaurant sets a good example of excellent customer service and creates a positive atmosphere for guest relations.
- Assists servers on the floor during meal periods.
- Clears and resets counters or tables after each course when needed.
- Assists dining room servers in the food and beverage service, sets tables, serves guests as directed by the server, keeps menus clean, and maintains the clean table between servings and menu knowledge.
- Assists with providing tables with beverages.
- Removes solid linens and replaces them with clean linen.
- Transports dirty dishes to the dishwashing station.
- Polish silver and glass as needed.
- Present menu, answer questions, and make suggestions regarding food and beverage.
- Seat guests in the dining room.
- Explain, pair and recommend wine from the wine list.
- Serve food and beverage in a genuine, friendly, professional, and efficient manner consistent with the Kessler image and standards.
- Relays orders to the kitchen through POS and helps serve courses from kitchen and service bars.
- Total’s bill and accepts payment when needed.
- Proficiently utilizes the property management systems and follows cash handling procedures.
- Sets up bar & dining room in a thorough and swift manner.
- Sets up dining room when needed in a thorough and swift manner.
- Empowers Grand Performers to provide excellent customer service.
- Ensures staff understands local, state, and Federal liquor laws.
- Monitor’s alcohol beverage service in compliance with local laws.
- Ensures point of sale operations and cash handling practices are following standard operating procedures.
- Edit’s work schedules and evaluates the work performance of employees.
- Assigns and coordinates work of employees to promote the efficiency of operations.
- Strategic business leader – Works strategically to devise plans in alignment with organizational goals.
- Cultivates engagement – Builds loyalty to the company and not to themselves. Proven ability to host/facilitate effective meetings, motivate teams to produce results with tight time frames while simultaneously managing several projects.
