General Mission

Will take full ownership of the kitchen operations. They are responsible for the quality, consistency, and profitability of all food production for the restaurant and catering. Ensures the kitchen operates as a profitable, high-efficiency unit dedicated to delivering authentic, exceptional Spanish cuisine and maintaining the highest standards of hygiene.

Core Responsibilities Financial Management & Profitability
  • Achieve and maintain the monthly forecasted food cost percentages and manage kitchen labor costs.
  • Proactively manage all food costs, including waste, spoilage, and efficient utilization of ingredients.
  • Assist in the preparation of the Annual Business Plan and the monthly forecast of food revenues and expenses.
  • Maximise kitchen employee productivity through effective delegation, cross‑training, and flexible scheduling.
  • Oversee the proper use and security of kitchen assets and perishables.
  • Manage inventory control for all raw materials, establishing par stocks, ensuring proper rotation, and conducting accurate monthly inventory.
Operational Excellence
  • Design, develop, and execute the entire food menu to align with the authentic Spanish concept and company brand standards.
  • Establish and oversee the consistent implementation of high culinary standards (preparation, execution, and presentation) across all stations.
  • Monitor all kitchen operations, especially during peak business periods, ensuring speed, consistency, and quality are maintained.
  • Work closely with the management team to ensure seamless service flow and communication between management team.
  • Develop an outstanding vendor relationship and manage purchasing to ensure the highest quality ingredients at the best prices.
  • Ensure all kitchen equipment is properly cared for to maximize its useful life and minimize downtime.
Guest Experience & Brand Promise
  • Ensure the kitchen team consistently delivers dishes that exceed the guest’s culinary expectations and uphold company brand promise.
  • Taste and monitor all food products served constantly, providing precise and timely feedback.
  • Handle complex customer complaints related to food quality or dietary requirements, ensuring satisfactory resolution.
Marketing & Business Development
  • Constantly evaluate local and international culinary trends to ensure the menu remains competitive and innovative.
  • Develop seasonal menus, daily specials, and exclusive dishes for catering events.
  • Review and analyze the weekly/monthly Menu Sales Analysis to engineer the menu for greater profitability and customer satisfaction.
Administration & Compliance
  • Comply rigorously with Food Safety Management System and hygiene practices.
  • Be fully responsible for updating and reviewing the Kitchen SOPs and Risk Management Plan.
  • Conduct pre‑shift briefings and regular technical training sessions.
  • Maintain kitchen maintenance logs, records, and ensure strict adherence to personal hygiene and safety protocols.
  • Assist the Restaurant Manager with rostering, tracking attendance, and performance reviews.
