Job Description
Prepares and cooks a variety of meals and food options for vessel crews over 130 people.
Reports to:
Chief Steward
- Cooks midnight meal and breakfast according to menu and supplies.
- Bakes assorted bread, pastry and dessert items.
- Uses appropriate equipment and sanitation procedures for cutting and slicing meats, vegetables and baked goods.
- Reads and follows recipes including measuring, weights and preparation instructions.
- Adapts recipes for group size based on menu selection for the meal.
- Plans menu items with the Chief Steward to ensure supplies are fully used and meal options are diversified, using foods in season and local availability when possible.
- Maintains adequate supply of food for each meal, working with Galley Assistants to monitor steam tables, salad bar and snack options to ensure availability for crew.
- Orders supplies and keeps records and accounts.
- Directs activities of one or more workers who assist in preparing and serving meals.
- Maintains a clean working environment. Cleans kitchen and all dishes on a daily basis.
- Assists with meal preparation, service and maintaining the steam and cold tables, and cleaning up and properly storing leftovers and ingredients.
- Washes dishes, pots, pans and utensils during meal‑times and throughout the day as needed; maintains dishwasher supplies and cleanliness.
- Maintains cleanliness of the dining and lounge areas at all times, including mopping floors, cleaning tables, chairs, counters, condiment holders, walls and lounge areas.
- Cleans and stocks beverage station in the dining area, including coffee machines, juice and water dispensers.
- Stocks dining hall with items used by the crew, such as condiments, cereal, bread, paper products and utensils.
- Cleans and fills steam tables, ensuring they are powered on/off as required based on scheduled meal service.
- Stocks all dining area condiments, cereals, bread, paper products and utensils regularly.
- Assists cooks with stocking galley supplies for the daily menus and maintains cleanliness of dry storage and cooler areas.
- Assists with preparing salad items, maintains a clean salad storage area and monitors left‑over storage and freezer area, ensuring the freezer is clean and defrosted as needed.
- Assists the vessel Housekeeper as needed. Performs additional tasks as directed by the Chief Steward.
- Participates in all backload and offload activities.
- Learns and follows all hygiene and safety rules and protocols, including using only approved cleaning products and regular use of Personal Protective Equipment (PPE).
- Participates in crew meetings, safety orientations and drills as required.
- Operates safety‑sensitive equipment and machinery only with authorization and proper training.
- Develops awareness of galley environment and potential hazards, immediately notifying supervisors and communicating with coworkers to maintain safe working conditions.
- Typical equipment: automatic dishwasher, standard cleaning equipment, cleaning solutions, standard food preparation knives and utensils.
- Standard Personal Protective Equipment: hairnets, aprons, gloves. When necessary: hard hats, hearing protection devices, respirators, survival suits and life preservers.
- Shifts are 12 hours per day, 7 days a week for the duration of the fishing contract.
- Contracts are seasonal, duration based on the season and availability of fish.
- Conditions in the galley may vary in temperature and weather may cause the vessel to move unexpectedly during operation.
- Crew members are provided with a bunk, mattress and locker in crew quarters.
- Crew lounge provides access to two computer kiosks for short‑term usage during breaks.
- Pay is crew share based with a daily minimum guarantee.
- Room and board provided by the company.
