PurposeThe Meat Clerk position allows you to demonstrate excellent meat preparation skills while interacting with shoppers. You will greet customers, answer product questions (including ordering, receiving, stocking and displaying varieties of meats and cheeses). To be successful you should care about high-quality meat products and be able to display, wrap, rotate, and prepare fresh and frozen meat, poultry and seafood. You will have the opportunity to develop and share knowledge about meat preparation and cooking prime cuts.

The essential duties of the Meat Clerk include, but are not limited to, the following responsibilities:
- Customer comes first: provide prompt and friendly service to support the store’s priority of customer care.
- Provide the best possible customer service whenever possible.
- Follow the assigned weekly work schedule to ensure adequate coverage in the meat area; maintain punctual and regular attendance.
- Arrive on time and leave as scheduled unless directed otherwise.
- Work overtime as assigned.
- Dress and groom according to company policy (uniform, name badge, meat coat and hat or apron).
- Maintain a neat, well-groomed appearance; wear an approved hat or hair net.
- Perform duties in accordance with company rules, safety requirements, policies, and health and civil code regulations.
- Avoid gum chewing and mobile devices during the workday.
- Greet customers within 10 feet and provide prompt, courteous service.
- Be attentive to customers and listen to their needs.
- Maintain sanitation and safety of the meat area; comply with food safety, health and packaging requirements.
- Maintain highest sanitation and safety in the meat cutting and preparation area.
- Set up and complete prep work for the entire meat department.
- Inspect packaged products for freshness and visual appeal; re-wrap as required.
- Take stock of storage and shelf areas; ensure refrigerated cases are stocked and faced according to movement and standards.
- Rotate meat ingredients using oldest product first (FIFO); ensure ready-to-cook meats are prepared according to recipe guidelines.
- Wrap, weigh, and price meats and related products; safeguard inventory to reduce spoilage and pilferage.
- Familiar with invoice documents; confirm accuracy during deliveries.
- Inspect incoming merchandise for packaging and freshness; reject items that do not meet standards.
- Record markups/markdowns and write-offs per policy; follow receiving/code dating procedures.
- Be aware of competitor pricing and inform management if it affects sales.
- Minimize waste in meat cutting preparation.
- Order wrapping supplies when directed.
- Maintain equipment cleanliness and safety; use industry formulas for cutting tests and yields.
- Check refrigeration equipment for proper performance when assigned.
- Assist other meat staff and be prepared to handle all jobs within the department.
- Perform other duties as assigned; stay productive during slow periods.
- Demonstrate a can-do attitude and approach to finishing tasks.
- Under the Meat Manager direction, monitor markdowns of nearly dated products to promote sales and maintain quality image.
- Conserve utilities and observe sound practices; use equipment safely.
- Assist in equipment maintenance and safety; perform other duties as assigned by the Meat Manager or Store Management.
- Must have good communication and writing skills.
- Ability to read and comprehend instructions; basic math and accounting skills for food costing and percentages.
- Proficiency in reading/writing English to understand directions and forms.
- Ability to hear, speak and understand spoken language to respond to requests and communicate with coworkers and customers.
- Ability to fill out forms and prepare reports.
