The primary purpose of this post is to assist the Culinary Studies and Nutrition lecturer to administer practical classes in Hospitality. The incumbent will also assist the lecturer in training culinary students in simulated kitchens through a practical training program.
Key Performance Areas:- Provide technical support for kitchen practical training.
- Supervise, enforce student discipline and transfer skills in the training kitchen.
- Maintain current and accurate records for all culinary practical recipes.
- Plan and execute practical assessments.
- Design and facilitate short courses for the community
- Conducttaste tests of new recipes to determine if they are suitable for use by the community.
Qualification:
A 3-year Hospitality qualification in Pastry & Bakery/Professional Cookery or any Culinary related qualification.
Years of experience:- At least five years' experience as a Chef/Culinary Manager.
- At least 3 years' experience in a training kitchen as an instructor in an institution of higher learning.
- Some experience in the mentoring of students and facilitation of practical classes in training kitchens.
- Knowledge in the form of mastery of cooking and baking principles and techniques.
- Knowledge and experience of hybrid models of teaching and learning (f2f and online).
- An appreciation of modern methods of cooking and theories of teaching and learning in Higher Education and some skills as a chefs instructor.
- Technical skills in the form of mastery of cooking and baking principles and techniques.
- A high degree of technical ability to relay information in a manner that provides a positive learning experience and instils a passion for the chefs profession.
- Demonstrated competency in a range of techniques and procedures associated with scientific practical classes
- Training of students, enforcing discipline and transferrin of skills.
- Ability to conduct culinary practical classes.
- Ability to demonstrate practical skills transfer.
- Ability to work with lecturers and laboratory technician as well as other relevant stakeholders in the school and institution to provide training kitchen insights and advise
- People orientated, hard worker, responsible, reliable, creative, and innovative.
- Proven attributes of transparency, integrity and teamwork.
- Respectful, honesty, punctuality and understand of protocol.
