Sous Chef – Luxury Safari Lodge – Kwa Zulu-Natal
Kendrick Recruitment is seeking an experienced Sous Chef to join the pre-opening team of a luxury Big 5 safari lodge. The successful candidate will support the Executive Chef and Executive Sous Chef, supervise kitchen staff, and deliver exceptional five-star cuisine and dining experiences for international guests.
Salary: R35,000 DOE
Key Responsibilities:
• Support the Executive Chef and Executive Sous Chef in daily kitchen operations
• Supervise and mentor kitchen staff to maintain high performance standards
• Ensure food quality, presentation, and portion control meet luxury standards
• Manage inventory, stock control and monitor food costs
• Assist with menu planning and the development of innovative dishes
• Maintain hygiene and safety standards in accordance with regulations
Requirements:
• Proven culinary expertise in modern and traditional cuisine
• Leadership and team supervision experience
• High standards in food quality, presentation and portion control
• Knowledge of inventory, stock control and food cost management
• Luxury lodge or high-end hospitality experience preferred
• Ability to work in a fast-paced, high-pressure environment with creativity and precision
