Position Summary

The Assistant Kitchen Manager (AKM) supports daily kitchen operations at The Bull, ensuring food quality, speed of service, cleanliness, and team accountability. This role is hands‑on, leadership-driven, and focused on execution—helping the kitchen run efficiently while maintaining high standards and low waste.

The AKM leads by example on the line, enforces systems, and helps develop a strong, reliable kitchen team.

Key Responsibilities Kitchen Operations
  • Execute daily service to The Bull’s standards for speed, consistency, and quality
  • Work all stations as needed during service
  • Ensure recipes, portions, and plating are followed exactly
  • Assist with opening and closing procedures
  • Maintain a clean, organized, inspection‑ready kitchen at all times
Team Leadership
  • Lead line cooks and prep staff during service
  • Train new hires on recipes, stations, and kitchen standards
  • Hold staff accountable for performance, attendance, and cleanliness
  • Communicate clearly and professionally with the team and management
  • Help maintain a positive, disciplined kitchen culture
Inventory & Waste Control
  • Assist with ordering, receiving, and rotating inventory (FIFO)
  • Monitor prep levels to prevent overproduction and waste
  • Track food waste and report issues to the Kitchen Manager
  • Ensure proper storage, labeling, and dating of all products
Food Safety & Compliance
  • Enforce all food safety, sanitation, and health code standards
  • Ensure proper temps, logs, and cleaning schedules are followed
  • Address safety concerns immediately
Support & Growth
  • Assist the Kitchen Manager with scheduling, prep planning, and menu execution
  • Provide feedback on systems, workflow, and efficiency improvements
  • Step into leadership when the Kitchen Manager is not present
Qualifications
  • 2+ years kitchen experience (line cook or lead preferred)
  • Strong understanding of high-volume service
  • Proven leadership and communication skills
  • Knowledge of food safety and sanitation practices
  • Ability to stay calm and focused under pressure
  • Reliable, organized, and detail-oriented
Physical Requirements
  • Ability to stand for long periods
  • Lift up to 50 lbs
  • Work in a fast‑paced, hot kitchen environment
