Job SummaryThe Kitchen Steward / Dishwasher is responsible for the overall cleanliness of kitchen areas and dishware, tableware, and service ware under the guidance of the Kitchen Steward Supervisor.
Essential Duties And Responsibilities- Cleans according to standards the following items and areas:
- Broilers
- Deep fryers
- Grills
- Ovens
- Range hoods
- Ware washing machines
- Floors
- Walk-ins
- Carefully rinses all dishware, tableware, and service ware for restaurants before sending them through the dish machine.
- Knows and practices Health & Safety standards as set forth by governmental agencies.
- Washes hands at each possible point of contamination.
- Clears, deck brushes, and mops all kitchen floors.
- Follows 3-compartment sink procedures.
- Weekly de-liming of each dish machine.
- Uses all chemicals according to purpose and knows where data sheets are located.
- Reports any malfunction of the dishwashing machine, including temperatures (too low or too high) or any other type of equipment.
- Sets up, breaks down, and maintains all dishwashers.
- Empties all trash receptacles and cardboard boxes into the dumpsters.
- Cleans and maintains all cook lines.
- Any other duties as assigned by supervisors in order to maintain kitchen:
- Cleaning ice machines
- Cleaning hand sinks
- Filling paper towel and soap dispenser
- Organization, cleanliness, and ensuring inventory of clean floor signs is in good repair.
- Other duties as assigned.
Skills And Abilities
- Ability to multi-task.
- Communication skills for safety.
- Provides good internal customer service to team members.
- Available to work when needed, including weekends, holidays, and nights.
- High school diploma or equivalent preferred.
- Customer Service or Food & Beverage experience is preferred.
- Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.
- Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.
- Must be able to obtain and maintain appropriate licensing.
The work environment is loud, may have smoke, and requires endurance of hot and moist conditions. Physical demands include sitting or standing, walking, using hands, reaching, climbing, stooping, kneeling, crouching, crawling, talking, hearing, lifting, pushing, pulling up to 50 lbs independently or >50 lbs with assistance.
