We are a USDA-inspected meat processing plant with harvest floor in Texas, focused on custom butchery for cattle, pigs, lamb, and goats.
We are searching for a skilled whole animal butcher with HACCP understanding who is experienced in creating artisanal charcuterie and other value-added-meats, such as sausages, meat sticks, and jerky. Ideally, this candidate would be experienced to oversee ready-to-eat production, including HACCP compliance. Close collaboration with the fabrication floor is required.
