Executive Chef

Key

Purpose:

The Executive Chef is responsible for all back‑of‑the‑house elements and supports all cafés on campus at the ISS Guckenheimer‑operated facility to ensure client and guest satisfaction. The Executive Chef ensures ISS Guckenheimer best practices are followed to uphold our high‑quality standards and assists the General Manager to achieve financial success through the implementation of culinary best practices, guidelines, policies, and SOPs dictated by ISS Guckenheimer.

Criteria
  • Monitor and ensure kitchen organization and cleanliness providing a safe environment for all employees and guests.
  • Workplace Safety, Food Safety, Menu, HACCP, and internal audit guidelines, policies, and SOPs are followed daily.
  • Maintain a consistent passing score on internal audit each quarter.
  • Ensure immediate corrective actions are given and documented when safety and sanitation guidelines are not followed.
  • Procurement Integrity Index scores are compliant with Key Performance Indicators.

Key Accountabilities
  • Utilize Net Menu to create seasonal, regionally inspired, plant‑forward recipes and menus with a minimum of 2 weeks available in the system at all times.
  • Communicate budget and support each café lead in maintaining all menu offerings that follow café‑specific, client‑approved programming as well as core program standards.
  • Prepare, cook, and portion meals accurately for breakfast, lunch, dinner, and special/catered events.
  • Maintain accurate production records pre‑ and post‑service.
  • Use cooking techniques outlined by ISS Guckenheimer.
  • Utilize Net Menu Order Worksheets to purchase appropriate amounts of ingredients.
  • Ensure employees have appropriate equipment, inventory, and resources.
  • Notify management of ingredient discrepancies or safety issues that require attention.
  • Maintain Net Menu applications for historical data.
  • Participate in culinary leadership team meetings to provide feedback and support.
  • Follow all company guidelines, SOPs, procurement purchasing guidelines, and HSEQ policies daily.
  • Document inventory monthly and inspect labeling compliance.
  • Serve as final decision maker for back‑of‑the‑house staff hiring.
  • Lead all aspects of culinary training and validation.
  • Support GM with workforce development reviews.
  • Align financial initiatives with GM on budget, labor, and operating costs.
  • Support GM in meeting financial goals and expectations set by the Area Manager.
  • Manage catered events, ensuring operational standards and cost requirements are met.
  • Perform other duties as needed.
Physical Demands & Work Environment
  • Capable of lifting up to 25 lbs. without assistance.
  • Dress according to the dress code.
  • Work under pressure and meet deadlines during peak periods.

This includes following safety protocols, maintaining environmental responsibility, and upholding quality standards in all tasks. Employees are expected to actively participate in HSEQ training and report potential hazards or compliance concerns.

Benefits & Compensation
  • Full‑time employees receive a benefits package including medical, dental, life and disability insurance, and a comprehensive leave program based on employment status.
  • Annual salary range: $81,350.00 – $88,000.00 per year. Final compensation will be determined based on experience and skills and may vary from the listed range.
