Job Description

The Pastry Sous Chef oversees the production of all pastries, including Italian pasticcini, cakes, desserts, cookies, candies, and other dolci. Reports to the Executive Chef and Pastry Chef de Cuisine; manages a pastry team of about 10 employees.

  • Supervises and participates in pastry production for counters and restaurants
  • Assists in managing the pastry team: scheduling, payroll, training, coaching, and counseling
  • Ensures all foods meet quality standards in portion, flavor, texture, and consistency
  • Produces decorative centerpieces and special orders
  • Orders and requisitions supplies
  • Maintains a clean and sanitary food production area according to health standards
  • Performs additional duties as required
Qualifications
  • 4+ years of high-volume pastry experience
  • Knowledge of Italian pastries and techniques
  • Excellent communication and leadership skills
  • Intermediate computer skills
  • Post-secondary culinary/pastry arts training preferred
Additional Information
  • Flexible schedule, including evenings and weekends
  • Ability to lift up to 50 pounds
  • Ability to stand, walk, bend, and squat for up to 8 hours
  • Experience with pastry baking equipment

Salary: $65k - $75k annually
