Position OverviewAs a Journeyman Meat Cutter, you will meet daily production needs and quality standards in meat cutting and preparation. Your responsibilities include receiving, stocking, cutting, grinding, wrapping, weighing, pricing, and merchandising meat products, as well as managing prepackaged deli items and frozen foods related to the meat department. You will package and prepare trays, perform product rotation, answer customer questions, and support special requests.
Key Responsibilities And Accountabilities- Locate appropriate meat portions in the walk‑in freezer/refrigerator, remove pieces, and move them to the cutting room.
- Use knives and occasional band saw to prepare specific cuts of meat from larger portions.
- Set machines for proper pricing and labeling of meat to be wrapped.
- Arrange packages on display and remove any out‑of‑date or damaged items.
- Clean and sanitize work areas and equipment, including tools, counters, and floors.
- Operate an electric tow motor to move pallets from receiving to storage areas.
- Instruct, supervise, and direct Apprentice Meat Cutters as required.
- Perform other duties as assigned.
- Ability to comprehend and follow specific instructions.
- Ability to perform simple and repetitive tasks.
- Maintain work pace appropriate to a given workload.
- Knowledge of meat types (incl. primal cuts), poultry, fish, and pre‑packaged products.
- Awareness of seasonal/holiday product needs.
- Understanding of cooking trends and recipe influences on demand.
- Familiarity with department food safety and hazardous material regulations.
- Proper use and care of professional cutlery, saws, tenderizers, grinders, wrapping equipment, and related tools.
High School Diploma (or G.E.D.) or equivalent job experience.
ExperiencePrior Meat Department experience, including meat cutting.
OtherAvailability to work a variety of required retail hours; must operate equipment such as grinders, pallet jacks, saws, scales, and registers.
PhysicalStore environment: ability to sit, stand, walk, kneel, stoop, use stairs, reach, pull, and lift objects; requires lifting up to 50 lbs.
