We’re looking for an exceptional General Manager to lead it – someone who can balance the rhythm of service with the rigour of the numbers and set the tone for a team that delivers brilliance, plate after plate, service after service. This is a role for a true operator: calm under pressure, commercially sharp, and completely at home in a high-volume, premium dining room where standards matter and atmosphere counts.

As General Manager, you’ll take full ownership of one of Brighton’s most iconic restaurants. You’ll be the steady hand on the helm - shaping culture, setting standards, and steering performance - while staying present on the floor, where the energy of the room lives. From a sun-soaked terrace lunch to a packed Saturday night service, you’ll lead from the front. Behind the scenes, you’ll keep a close eye on costs, forecasts and performance, ensuring the business is as healthy as it is vibrant.

• Full P&L ownership and commercial performance
• Budgeting, forecasting, cost control and revenue growth
• Leading, developing and inspiring a large FOH & BOH team
• Creating a culture of high standards, warmth and accountability
  
  Delivering consistently exceptional guest experiences
• Maintaining operational excellence in a fast-paced, premium environment
• Building and nurturing a strong, engaged management team

You’re a proven hospitality leader who thrives in a big, buzzing operation and takes real pride in the details.

• GM experience in a premium, fine-dining or high-volume restaurant
• Strong commercial acumen and confidence owning large budgets and KPIs
• Experience leading sizeable teams across kitchen and floor
• A calm, credible, hands‑on leadership style
• A natural presence on the floor with guests and team alike
• High standards, sharp attention to detail, and real pace
• The resilience and energy to lead a flagship coastal restaurant
