The Steward is responsible for general sanitation and cleaning of all back‑of‑house areas. The position ensures compliance with Virginia Department of Health cleanliness and sanitation standards, maintains the dish machine, and keeps culinary areas clean.
Essential Functions- Thorough cleaning of all plates, utensils, and kitchen tools.
- Deep cleaning and organization projects as needed or delegated by management.
- Proper scrubbing and storing of all pots and pans.
- Maintain and clean the employee dining area.
- Daily sweeping and mopping of kitchen floors before service and after service and as directed.
- Clean all floor drains and catches.
- Assist with polishing of service ware as needed.
- Organize all storage areas for non‑food items and cleaning supplies.
- Communicate when cleaning supplies run low.
- Pressure wash floors as directed.
- Properly clean and maintain the dish machine.
- Stock and maintain hand soap and hand towel stations.
- Assist with other cleaning and maintenance projects as prescribed by culinary management.
- Polish copper service ware as needed.
- Other duties, as assigned.
Required
- Ability to work nights and weekends.
- Access to a reliable mode of transportation.
- Serv Safe certification within 6 months.
- Capable of following direction and completing tasks given in a timely manner.
- Self‑motivated to work diligently and at speed, particularly during service.
- Strong team player.
- Desire to work quickly and efficiently.
Desirable
- Minimum one year stewarding experience in a food establishment.
- Bilingual in Spanish and English.
- Attention to detail when cleaning.
- Able to handle china and glassware with care.
- Quick and efficient work manner.
- Able to follow direction and complete tasks given in the required time.
- Self‑motivated to work diligently, particularly during dinner service.
- Strong communication skills.
- Ability to lift 50 lbs.
- Ability to stand for long periods of time (8–10 hours consistently).
- Exposure to hot pans, sharp knives, open flames, and temperatures ranging from hot to cold.
- Availability and understanding that the position often requires hours more than a standard workweek (40–50 hours).
