This position plays a critical role in supporting Augusta Health’s mission and advancing departmental goals through measurable performance indicators and service excellence. The Production Cook is responsible for planning the cooking schedule in conjunction with the Production Manager to ensure that food will be ready at specific times. They collaborate with the Production Manager regarding modified diet preparation and use of leftovers, wash, trim, cook, and season food items for each meal, and measure and mix ingredients according to recipes.
They bake, roast, and broil meats and other foods, observe and taste food being cooked to assure the product meets standards and reflects recipe adherence, and procure food products from refrigerators, freezers, and dry storage areas. Assistance from co‑workers can be requested when needed, and portions are controlled as required.
Job Duties
- Date and label monitored.
- Articulate an understanding of modified diets; speak knowledgeably and fluently about them.
- Perform simple calculations to adjust quantities of standardized recipes and extend recipes as needed.
- Check walk‑in storage units daily to coordinate leftovers within the day’s menu.
- Follow sanitation rules established by the Health Department and the hospital’s Infection Control Committee; demonstrate knowledge of cross‑contamination and report issues.
- Ensure proper temperatures for all food placed on the serving line and in the cafeteria; consistently record temperatures.
- Prepare foods for patients, cafeteria, and other food service areas according to provided recipes; adhere to taste panels preferred by the Production Manager.
- Rotate meats, frozen foods, and other items on a “First In, First Out” basis.
- Report food shortages, outdated items, or any food received in poor condition promptly.
- Communicate with management and supervision about workplace concerns.
- Replenish cafeteria and patient serving lines throughout meal periods; maintain backup for lines when necessary.
