The Baker (Lead/Senior) is responsible for the preparation, baking, finishing, and presentation of a variety of bakery products while providing day‑to‑day work direction and training to bakery staff. This role supports the Bakery Manager by assisting with workflow coordination, production planning, and quality control, while remaining hands‑on in all aspects of bakery production. The position requires strong baking skills, leadership abilities, and strict adherence to all California, local, and federal food safety and workplace regulations.

Customer Service & Communication- Greet customers promptly and courteously and provide assistance, product information, and recommendations as needed.
- Maintain professional and effective communication with bakery team members, management, and other departments.
- Prepare doughs, batters, icings, fillings, and scratch baking mixtures according to approved recipes and production schedules.
- Mix, knead, portion, shape, pan, proof, bake, ice, decorate, and finish breads, rolls, cookies, cakes, cupcakes, and other bakery items.
- Pan and round bread dough; pan frozen products as required.
- Accurately scale and portion products using commercial scales and weight measures.
- Load, unload, and monitor ovens safely, adjusting temperatures and bake times for various products.
- Perform quality checks to ensure finished products meet Company standards for freshness, taste, texture, and appearance.
- Provide daily work direction, guidance, and hands‑on training to bakery associates.
- Assist in assigning tasks, prioritizing workloads, and ensuring production goals and deadlines are met.
- Monitor employee compliance with Company policies, food safety requirements, and safe work practices.
- Support with training of new bakery team members.
- Serve as a point of contact for bakery operations in the absence of the Bakery Manager.
- Communicate operational issues, performance concerns, and training needs to the Bakery Manager.
- Lead by example and promote a positive, collaborative, and safety‑focused work environment.

Food Safety & Regulatory Compliance- Comply with all applicable local, state, and federal regulations, including the California Retail Food Code, OSHA standards, and Weights and Measures requirements.
- Ensure proper sanitation, allergen awareness, labeling, and packaging procedures are followed.
- Maintain a valid California Food Handler Card and support team compliance.
- Assist in receiving, unloading, and verifying deliveries against vendor invoices.
- Inspect products for quality, count, and condition upon receipt.
- Rotate ingredients and merchandise using FIFO (First In, First Out) practices.
- Assist with ordering, inventory control, stocking, and storage.
- Handle damaged, expired, or spoiled products in accordance with Company policy.
- Safely operate and oversee the use of bakery equipment, including mixers, ovens, slicers, dough rollers, and related tools.
- Ensure bakery equipment, tools, and work areas are properly cleaned and sanitized.
- Identify and report safety hazards or maintenance needs promptly.
