• Produce all food items listed on the prep sheet, following Torchy’s recipes from the Taco Bible.
• Maintain a clean, organized kitchen and detail all equipment daily.
• Set up and break down your station to ensure readiness for each shift.
• Follow the Taco Bible for accurate recipe adherence.
• Implement food safety and HACCP techniques, including FIFO inventory management.
• Record pre‑ and post‑weights of food items, track yields, and properly label, date, and fill production pans.
• Rotate products as needed and assist with other duties as required by management.
• Masa production and pressing of corn tortillas using a tortilla press.
• Slack flour tortilla dough balls and ensure proper inventory for both flour and corn tortillas.
• Cook tortillas on a flat top to correct specifications.

• Valid Food Handler’s certification (must be obtained by first day or within required timeline).
• Familiarity with kitchen equipment: fryer, char grill, flat top, stove, Robo Coups, immersion blender, dicers, mandolin, scales.
• Physical ability to lift at least 40 lbs.
• Basic knife safety, communication, reading skills, and multitasking ability.
• Kitchen experience is a plus.
• Age requirement: 18+.
