We are seeking a highly skilled Master Baker to oversee all bakery production during the hotel’s pre-opening and ongoing operations. In this role, you will craft premium-quality baked goods, develop innovative recipes, supervise bakery staff, and ensure the highest standards of consistency, flavor, and presentation.

What Will I Be Doing? Artisanal Baking & Product Excellence- Produce a wide range of high-quality baked goods including artisan breads, viennoiseries, pastries, desserts, and specialty items.
- Develop and refine recipes that align with Hilton brand standards and the property’s culinary identity.
- Ensure consistency in flavor, texture, portioning, and visual presentation across all bakery products.
- Innovate seasonal offerings, signature items, and bakery concepts in collaboration with the culinary leadership team.
- Oversee daily bakery production, ensuring timely preparation to meet restaurant, banqueting, in-room dining, and retail requirements.
- Plan production schedules, ingredient usage, and workflow to maximize efficiency while maintaining quality.
- Monitor oven performance, equipment function, and operational readiness, coordinating repairs with Engineering as needed.
- Ensure proper storage, rotation, and usage of ingredients following HACCP and food safety guidelines.
- Lead, mentor, and train bakery colleagues, fostering a positive and professional work environment.
- Conduct training on baking techniques, dough handling, pastry skills, and equipment operation.
- Ensure all team members adhere to standard recipes, SOPs, and quality expectations.
- Support performance management, scheduling, and skill development to build a highly capable bakery team.
- Uphold strict adherence to food safety standards, HACCP principles, and hygiene regulations.
- Maintain cleanliness, organization, and sanitation within all bakery production areas.
- Ensure proper handling, labeling, and storage of all products to minimize waste and prevent contamination.
- Conduct regular inspections and participate in internal audits to ensure full compliance.
- Work closely with the Executive Chef, Pastry Chef, and culinary leadership to design bakery offerings for all outlets.
- Participate actively in menu planning, tastings, and product development sessions.
- Support pre-opening tasks such as equipment selection, recipe development, par level planning, and bakery layout setup.
- Coordinate with Purchasing and suppliers to source high-quality flours, grains, chocolates, fats, and specialty ingredients.
A successful Master Baker at Hilton should possess:
- Professional certification or diploma in Baking, Pastry Arts, or Culinary Arts.
- Proven experience as a Master Baker, Head Baker, or Senior Baker in luxury hotels, boutique bakeries, or high-end pastry establishments.
