** Description of Work
** This is skilled work in preparing and cooking a major portion or all of a meal in a facility. Employees are usually responsible for either general meat or vegetable preparation although these two functions may be combined. Work is performed in accordance with menus prepared and quantities provided by the dietary staff for each meal and requires skill in determining cooking times for various food items in order to complete all portions of the meal at the prescribed serving time.

Work is reviewed by a supervisor to ensure that food is prepared safely according to schedule and that food waste is minimal.

/Management Preferences
** Basic knowledge of methods of preparation and cooking of food in quantity lots. Basic knowledge of the amounts of raw food needed to supply the number of persons to be served. Basic knowledge of the standard tools, methods, and practices utilized to maintain food safety. Basic knowledge and ability to maintain high standards of sanitation as outlined in the NC Food Code.

Considerable knowledge of the uses and adaptabilities of the various pieces of equipment including kettles, convection ovens, convection steamers, braising pans, mixer, food processors, slicers and deep fryers. Ability to properly alter food consistency such as chopped, ground and pureed. Ability to perform simple mathematical computations. Ability to understand and follow oral and written instructions. Ability to interpret and follow standard recipes and prescribed.
** Salary Range: $31,200 - $46,991
*** Experience in methods of preparation and cooking food in a large-scale operation
* Working knowledge of the use and adaptability of various pieces of kitchen equipment
* Skills to instruct cooks in proper cooking methods and to direct and supervise kitchen personnel in serving meals and cleaning activities
* Knowledge to evaluate levels of sanitation and food safety and implement corrections when warranted
* Skills to follow prescribed menus and recipes as well as specific oral and written instructions

Longleaf Neuro-Medical Treatment Center (LNMTC), located in Wilson, NC, is a state-operated certified Skilled Nursing Facility (SNF). With a staff of about 520, LNMTC provides support to approximately 200 residents with complex medical needs and/or co-existing neuro-cognitive disorders.

THIS POSITION IS DESIGNATED MANDATORY AND MUST REPORT OR STAY OVER DURING ADVERSE WEATHER EVENTS OR OTHER EMERGENCIES.Basic knowledge of preparation, cooking and baking procedures. Basic knowledge of appropriate methods of cleaning and sanitizing equipment and small wares. Ability to perform moderately heavy physical labor for extended periods of time. Ability to maintain professional, cooperative working relationships with employees and/or patients. Ability to maintain high sanitation standards as outlined in the NC Food Code.

Ability to follow oral and written instructions. Ability to complete department records as required.
