Job Description:
We are seeking a skilled Tuna Cutter with proven experience working with high-grade tuna. In this role, the ideal candidate will participate in fresh tuna selection and production. Precision and consistency are critical, as tuna is one of the most valuable seafood products.
- Prepare tuna processing areas by organizing tables, wrapping papers, preparing plastic bags, and cleaning racks, knives, and labels.
- Position prepares work areas for production, fulfills daily customer order and cleans/sanitizes work areas post-production.
- Selects and cuts fresh tuna from loins efficiently by wasting as little loin as possible.
- Communicates with a tuna selector for quantity to cut and quality of the tuna.
- Wrapping, packing, labeling, and icing fresh tuna according to customer specification and HACCP requirements.
- Takes care left over tuna according to company GMPs and ensures proper storage.
- Cleans/sanitizes processing area and equipment based on HACCP and SSOPs after order preparation is completed.
- Disposes of waste product.
- Assist in order fulfillment by making boxes for use in packing products and placing them designated area.
- Participates in receiving and counting products delivered by or picked up by drivers.
- Participates in restocking/organizing frozen and dry products in freezer or dry area as needed.
- Performs other duties as assigned.

Qualifications- 3+ years of experience in cutting different species of tuna of 300+ lbs.
- 21 years of age.
- Knowledge of different tuna species.
- Ability to use knives safely.
- Ability to use pallet jack, hand lift truck, forklifts.
- Subject to cold processing room conditions and wet environment
- Uses knives
- Handles cleaning chemicals
- Operates material handling equipment
- Work around material handling equipment
Position requires strenuous physical work. Heavy lifting, pushing or pulling of objects up to 100 pounds frequently.
Do you have at least 2 years of experience cutting tuna or other high-value fish in a commercial setting?
Do you have professional knife handling and butchering experience?
Are you available to work the scheduled shift of 3:00 AM – 11:30 AM, including weekends or holidays if required?
