Butcher

A Butcher attends to the meat preparation needs of guests: selection, advice, butchering, weighing, band saw, grind and packaging.

• Department Oversight:
  Manage meat department operations, butcher schedules, product yields, and labor budgets.
• FSIS Regulatory Compliance:
  Enforce federal FSIS ground beef recordkeeping, grind logs, supplier lot number tracking, and equipment sanitization.
• Freshness & Rotation:
  Oversee pre-pack meat case dates, wet tray paper replacement, and sanitation standards.
• Vendor Ordering:
  Order raw beef, pork, poultry, and seafood, ensuring optimal profit margins and minimal waste.

• IDPH / Serv Safe Food Safety Sanitation Manager Certification required.
• Extensive butchery background and understanding of retail meat margins.
• Steel toe anti-slip safety shoes required; ability to lift up to 80 lbs.
