Bar Manager – Lounge / Restaurant

We are looking for an experienced and hands-on Bar Manager to oversee the day-to-day bar operations of a high-volume lounge and restaurant. The ideal candidate will have strong knowledge of beverage operations, excellent leadership skills, and a passion for delivering a high-quality guest experience in a dynamic hospitality environment.

The Bar Manager will be responsible for leading the bar team, maintaining service and product standards, managing beverage costs and inventory, and driving revenue while ensuring smooth coordination between the bar, floor, kitchen, reservations, and management teams.

• Oversee the daily operations of the bar, ensuring efficient and consistent service throughout all operating periods.
• Maintain high standards of beverage quality, presentation, service, hygiene, and guest interaction.
• Ensure the bar is fully prepared for daily service, peak periods, events, and special activations.
• Monitor service flow and make operational adjustments during busy periods.
• Ensure all company policies, procedures, and health and safety standards are followed.

• Lead, motivate, and develop the bar team, including bartenders, barbacks, and support staff.
• Prepare and manage staff schedules in line with business levels and operational requirements.
• Conduct daily briefings and ensure the team is informed about promotions, events, VIP guests, and operational updates.
• Train team members on cocktails, spirits, wines, service standards, upselling techniques, and product knowledge.
• Monitor team performance and provide regular coaching and feedback.
• Maintain discipline, grooming, punctuality, and professional standards within the team.

• Oversee the beverage menu, ensuring quality, consistency, profitability, and alignment with the restaurant/lounge concept.
• Work closely with management and suppliers on new products, promotions, and beverage initiatives.
• Develop and maintain cocktail recipes and ensure consistency across the team.
• Monitor beverage presentation, portion control, and product specifications.
• Support the creation of seasonal cocktails and special beverage offerings.

• Manage beverage inventory, including spirits, wines, beers, mixers, and bar consumables.
• Conduct regular stock counts and ensure accurate inventory records.
• Monitor wastage, breakage, transfers, and variances.
• Control beverage costs through effective purchasing, portion control, and stock management.
• Coordinate with purchasing and suppliers to ensure appropriate stock levels and timely deliveries.
• Investigate and address stock discrepancies.

• Monitor daily bar sales, average spend, beverage mix, and key performance indicators.
• Drive beverage revenue through effective upselling and team engagement.
• Identify opportunities to increase sales through cocktails, premium spirits, bottle service, promotions, and special activations where applicable.
• Work with the management team on beverage promotions and commercial initiatives.
• Ensure pricing, margins, and product positioning are aligned with business objectives.

• Maintain a strong presence on the floor and behind the bar during service.
• Interact with guests and ensure feedback and concerns are addressed professionally and promptly.
• Handle VIP guests and special requests while maintaining the venue's service standards.
• Work closely with the Restaurant Manager and FOH team to ensure a seamless overall guest experience.
