Sanctuary Rainforest Resort & Spa is an upcoming 72-key, all-inclusive, alcohol-free, adults-only (minimum age 14) luxury wellness destination set in the pristine rainforest of Dominica , Caribbean. The resort is built around Ayurvedic and holistic health, longevity and wellness programmes, personalised guest experiences, sustainability and alcohol-free living.
The RoleWe are seeking a hands‑on Restaurant & Wellness Dining Manager to join our pre‑opening leadership team and lead the daily operation of the resort’s single restaurant and health bar. This is a service and operations role, not a commercial one: there is no alcohol service, no banqueting, no catering sales and no revenue targets – every dining experience is included in the guest’s stay.
Cuisine is Ayurvedic and plant‑forward, prepared to each guest’s individual wellness programme.
- Lead pre-opening readiness of the restaurant and health bar, including operational planning, OS&E requirements, SOP development and outlet readiness.
- Lead daily restaurant and health bar operations to five-star luxury service standards.
- Coordinate daily with the Chief Ayurvedic Physician, Spa & Wellness Physician and Executive Chef on guest dietary programmes and individual meal requirements.
- Recruit, train and develop a professional service team, including local team members, and build comprehensive training programmes.
- Own hygiene, food safety, HACCP and regulatory compliance.
- Manage inventory, stock control and supplier coordination in an island supply-chain environment.
- Manage the departmental budget and operational cost controls.
- Maintain duty rosters, SOPs and consistent service quality for uninterrupted daily operations.
- Degree or professional qualification in Hospitality Management, Food & Beverage Management or a related discipline preferred.
- Minimum 5 years of progressive food and beverage or restaurant experience, including a managerial or senior leadership capacity.
- International work experience is compulsory – candidates must have worked outside their home country (e.g. Maldives, Middle East, Caribbean or another international destination).
- Previous experience in a luxury hotel or resort environment is required.
- Pre-opening experience is highly preferred.
- Experience in a wellness retreat, Ayurveda resort, holistic health or destination spa property is a strong advantage.
- Experience with all-inclusive resort operations is an advantage.
- A trainer and coach by nature, with a hands‑on leadership style and excellent guest engagement.
- Genuine affinity with holistic wellness, plant‑forward and Ayurvedic dining, and comfortable working in a fully alcohol-free operation.
- At ease living and working in a remote island destination, single status.
- Excellent command of English, written and spoken; ability to communicate in French is a highly valued additional advantage.
An exciting opportunity to become part of the pre-opening leadership team of a distinctive luxury rainforest wellness destination in the Caribbean, with an attractive expatriate package commensurate with experience and qualifications: basic salary up to US $3,500 net per month, plus furnished single accommodation, duty meals, service-charge participation, mobilisation, annual home-leave and repatriation flights, work permit and visa costs, and statutory insurance.
