Dining Hall Foreperson assists the Head Cook in coordination of food preparation and helps cook buffet‑style meals for employees, crew, and customers.
Effective 1 December 2024, Dining Hall Foreperson II residing in Trident housing will be subject to a co‑pay of $15 per day for room and board, for each day that at least 8 hours of work is offered.
Essential Functions- Maintain strict food safety standards and ensure kitchen staff adhere to set standards, procedures, department rules, and sanitation requirements.
- Ensure all operations meet DEC and OSHA requirements and maintain consistent cleanliness and upkeep of the Dining Hall area.
- Lead, train, and support kitchen staff.
- Oversee and prepare meals for all shifts, including portion control and presentation, ensuring all meals meet quality standards.
- Manage food orders, inventory, and vendor communication.
- Provide hands‑on supervision and oversight for the preparation, cooking, and portioning of meals while coordinating staffing with operations leadership.
- Conduct routine and deep kitchen cleaning.
- Coordinate remotely with the Food & Beverage Manager.
- Use Microsoft Office and Teams for reporting and communication.
- Perform activities of workers led as needed.
- Perform other related duties as assigned.
- Acquire knowledge of Trident’s Environmental and Safety Policies by completing required training programs and performing designated work activities in accordance with training and procedures/work instructions.
- Notify designated personnel of any environmental or safety incidents or risks not previously documented, in accordance with Environmental Awareness and/or safety trainings.
- Frequently engage in teamwork while performing duties of this job.
- Occasionally use interpersonal and customer service skills.
- Speak and read English.

Minimum Requirements- At least 2 years of experience in a Chef or Kitchen Lead position.
- 3–5 years of experience in a Chef or Kitchen Lead position.
- One year certificate from college or technical school, one year of related experience and/or training, or equivalent combination of education and experience.
- HS Diploma or equivalent.
- Catering experience.
- Remote work‑site experience.
- Current SERV Safe Certification.
- Knowledge of food safety and cleanliness standards.
- Proficiency using Microsoft Office Suite including Outlook, Teams, and Excel.
- Bilingual in Spanish.
This position works in the kitchen where food is prepared and served. The role requires standing for long periods, working under pressure in a fast‑paced environment. The noise level can be moderately loud. Kitchens are usually crowded and contain potential hazards such as hot ovens or slippery floors. Kitchen staff must reduce risk by proper PPE—gloves, long‑sleeve shirts, aprons, and non‑slip shoes—to protect against slips, falls, cuts, and burns.

This position may require standing for extended periods, lifting up to 10 pounds regularly, lifting up to 25 pounds frequently, and occasionally lifting up to 50 pounds. The employee must climb or balance, sometimes sit, stoop, kneel, crouch, or crawl, and must be able to talk and hear. Specific vision abilities required include distance vision, peripheral vision, and depth perception.
