Be a crucial teammate in our food and beverage operation! The Anchorage-based prep cook is essential in prepping food products locally when possible to make them ready for the train. Our onboard rail kitchens are small and compact so we have all our fun commercial equipment for the prep team to use in the rail yard, this team sees the luxury of a fixed schedule.

RESPONSIBILITIES
  • Perform a variety of advanced food preparation tasks.
  • Routinely prepare, cook and process food to be utilized on-board rail cars.
  • Follow strict recipe guidelines for consistency, minimal waste, and portion control.
  • Routinely fill out logs and forms for time and temperature checks of food items, coolers, freezers, and sanitation buckets.
  • Monitor inventory, rotate supplies, and maintain required inventory levels.
  • Follow all end-of-day procedures including cleaning checklists, proper storage of products, and checkouts with the supervisor.
  • Wash dishes and clean the prep kitchen area.
  • Assist with receiving products and proper storage procedures.
REQUIREMENTS
  • Must pass a pre-employment background check.
  • Minimum age of 18 years is required to reside in company housing, where available.
  • Must be eligible to work in the United States.
    Holland America-Princess is unable to sponsor or take over sponsorship of employment visas at this time (e.g., H-2B status).
KNOWLEDGE, SKILLS, & ABILITIES
  • Must hav or be able to obtain an Alaska Food Handlers Card.
  • Must be able to lift 50 lbs./23 kg.
  • Ability to organize and prioritize work, and maintain attention to time constraints, while working in a team or group environment.
  • Ability to work in a fast-paced environment with multiple tasks and external influences.
  • Ability to work independently with minimal supervision while achieving daily goals.
  • Ability to support and comply with company policies, procedures, and guidelines including support and comply with company health and safety standards.
  • Ability to stand/walk/work on feet for a minimum of 8 hours per day.
