General Manager – Eloura Mediterranean

Location: Eloura Mediterranean – Madison, WI

Position Summary

Eloura Mediterranean is seeking an experienced, hospitality-driven General Manager to lead all front-of-house operations while partnering closely with the Executive Chef and ownership. The General Manager is responsible for delivering exceptional guest experiences, building a high-performing team, driving sales, controlling costs, and ensuring the restaurant operates at the highest standards every day.

This is a hands‑on leadership role. The General Manager is expected to lead by example, coach the team on the floor, solve problems quickly, and create a culture of accountability, professionalism, and hospitality.

Key Responsibilities

Leadership & Team Management

• Recruit, hire, train, schedule, and develop FOH managers and hourly staff.
• Foster a positive, accountable, and guest-focused culture.
• Conduct regular coaching, performance reviews, and disciplinary actions when necessary.
• Lead daily pre-shift meetings and communicate goals and expectations clearly.
• Ensure proper staffing levels based on business volume.

Guest Experience

• Maintain exceptional service standards at all times.
• Personally engage with guests and resolve concerns promptly and professionally.
• Monitor and improve online reputation across Google, Open Table, Yelp, and social media.
• Ensure every guest leaves with an outstanding dining experience.

Financial Performance

• Meet or exceed monthly sales and profitability goals.
• Manage labor costs, scheduling, overtime, and productivity.
• Control operating expenses while maintaining service quality.
• Review daily sales, labor, and financial reports and implement action plans when needed.

Operations

• Oversee daily restaurant operations, including dining room, bar, café, and private events.
• Ensure opening and closing procedures are completed accurately.
• Maintain cleanliness, organization, and presentation throughout the restaurant.
• Enforce company policies, health department regulations, and safety standards.
• Maintain inventory levels and coordinate ordering with vendors.

Marketing & Business Development

• Partner with ownership on marketing initiatives, events, happy hours, brunch promotions, and community outreach.
• Build relationships with local businesses, hotels, influencers, and organizations.
• Help increase repeat business and grow restaurant revenue.

Administrative Responsibilities

• Approve schedules and timecards.
• Monitor payroll and labor reports.
• Prepare weekly operational reports for ownership.
• Maintain accurate employee records and documentation.
• Ensure compliance with liquor laws, employment regulations, and company policies.

Qualifications

• 5+ years of restaurant management experience.
• Minimum 2 years as a General Manager or Assistant General Manager in a full-service restaurant.
• Strong leadership and team-building skills.
• Proven ability to manage labor, food costs, and financial performance.
• Excellent communication and conflict-resolution skills.
• Experience with POS systems (Toast preferred), scheduling software, and Microsoft Office/Google Workspace.
• Ability to thrive in a fast-paced environment while maintaining attention to detail.
• Flexible schedule, including evenings, weekends, and holidays.
