About the RoleWe are a fast-growing cannabis manufacturer seeking a hands-on Confectionery Cook to produce cannabis-infused, pectin-based gummies at commercial scale.
You will work from established recipes and SOPs, handling the production process from ingredient preparation and cooking through depositing, curing, demolding, and sugar sanding. This is a production-focused position—not an R&D or recipe-development role.
Previous gummy experience is preferred but not required. Candidates with commercial experience in candy, chocolate, caramel, baking, sugar cooking, or other temperature-controlled food production are encouraged to apply.
Responsibilities- Produce commercial batches of pectin-based cannabis gummies
- Accurately weigh and incorporate ingredients according to batch specifications
- Operate cooking, depositing, molding, curing, and sanding equipment
- Monitor temperatures, timing, texture, and gel set throughout production
- Identify and communicate quality issues such as inconsistent texture, stickiness, sweating, or improper set
- Demold, sugar-sand, inspect, and stage finished gummies for packaging
- Complete batch records and ingredient documentation accurately
- Follow all recipes, SOPs, food-safety procedures, and cannabis compliance requirements
- Clean and maintain equipment, tools, molds, and production areas
- At least one year of experience in confectionery, candy production, baking, commercial kitchens, or food manufacturing
- Experience following commercial recipes and controlling time and temperature
- Ability to weigh and measure ingredients accurately
- Strong attention to detail and commitment to batch-to-batch consistency
- Ability to follow SOPs, sanitation standards, and regulatory procedures
- Ability to lift up to 40 pounds and stand for extended periods
- Must be at least 21 years old and eligible to work in a Washington State-licensed cannabis facility
- Available to work a full-time weekday schedule
- Pectin-based gummies or other sugar-based confections
- Commercial kettles, cookers, depositors, or molding equipment
- Brix measurement, refractometers, or similar quality-control tools
- High-volume food or confectionery production
- Cannabis-infused product manufacturing
We’re looking for someone who is reliable, process-driven, and attentive to detail. The ideal candidate works well with a team, maintains a clean and organized workspace, and can identify small production issues before they affect an entire batch.
