Job Summary
The Senior Catering Manager is responsible for leading the Catering team, servicing events, contracting revenues, while overseeing the marketing for Biltmore Weddings. This will include, but is not limited to: working with team to meet/exceed revenue goals; assisting with strategic planning and budgeting processes, handling guest service issues and recovery; performance management and professional development for staff; hourly payroll, annual PARs for managers and hourly, team meetings, training, creating SOPs.
In addition, the incumbent will take lead in vendor relations, represent the Catering Sales Team on inter‑departmental teams as assigned, and will provide general assistance and support for the director and leadership, the department, and the company.
Job Duties
- Drive and Exceed Departmental Revenue Goals. Strategically lead luxury social catering sales to consistently meet or exceed revenue targets across the estate’s signature venues, with a strong focus on yield management, premium pricing, and long‑term brand value.
- Lead and Develop the Catering Sales Team. Provide hands‑on leadership to the Catering Sales team, including recruitment, onboarding, training, coaching, performance management, and annual reviews— ensuring exceptional service standards, accountability, and a culture aligned with luxury hospitality.
- Oversee Luxury Social Catering Marketing Initiatives. Partner with internal marketing and cross‑functional teams to curate and execute refined social catering marketing strategies that elevate the brand, highlight signature venues, and attract high‑end social and destination clientele.
- Serve as a Subject‑Matter Expert in Luxury Social Events. Maintain deep, current knowledge of luxury social events, design trends, and experiential planning, serving as a trusted advisor to clients, planners, and internal stakeholders.
- Lead High‑Level Contract Negotiation. Skillfully negotiate contracts, revenue minimums, concessions, and client liabilities with a strong understanding of risk management while protecting the integrity and financial goals of the brand.
- Support a Flexible, Event‑Driven Schedule. Demonstrate flexibility to support the demands of luxury events, including evenings, weekends, holidays, and early mornings, as required to ensure flawless execution and client satisfaction.
- Facilitate and Lead Internal Meetings. Attend and lead internal department, operations, and event‑specific meetings to ensure alignment across catering, culinary, operations, and venue teams.
- Oversee Billing, Payments, and Financial Accountability. Ensure a strong understanding of the billing lifecycle, payment collection, and aging reports, maintaining financial accuracy, compliance, and proactive follow‑up consistent with luxury client service expectations.
- Some college preferred. Additional education, training, and/or certification(s) a plus.
- At least four (4) years of related sales/event planning experience. Equivalent combination of education/experience considered. Ideal candidate will have had five (5) or more years of relevant experience in a similar luxury resort/hotel/destination setting. Knowledge of food/beverage, catering, and/or banquet operations strongly preferred.
- Demonstrated commitment to providing world class internal/external guest service; proven leadership skills; ability to build/motivate/develop teams.
- Outstanding interpersonal and communication skills; must be able to convey information clearly, concisely, and effectively to various audiences; strong public speaking/sales skills; professionally handles guest service concerns and recovery.
- Superior project and time management, organizational and planning skills are a must; prioritizes work under deadline; adapts/multi‑tasks as need; keen attention to detail with a focus on quality and service; anticipates/troubleshoots; creatively problem solves.
- Quickly acquires/maintains knowledge of Biltmore history, products, venues, systems, protocols; proficient in Work, Excel; knowledge of event software preferred.
- Proactive, exercises good judgment; maintains confidentiality; builds positive working relationships across the company at all levels; reflect brand/values at all times.
- Strong verbal and written skills required for effective communication.
- Some travel across the estate to event locations, etc. required; incumbent must have a valid driver’s license and be at least 18 years of age.
- Required to lift up to 50 pounds on occasion.
- Must be able to remain sitting for 60% of the shift and work under variable temperature conditions (extreme heat or cold) and noise levels.
- Accesses historic building/locations that may require climbing stairs.
