Position: Meat Cutter Journey - FT

A Meat Cutter Journeyman is a skilled professional responsible for preparing, cutting, and packaging meat products for retail or wholesale purposes while adhering to safety, quality, and customer service standards. This role requires in-depth knowledge of meat products, advanced cutting techniques, and compliance with food safety regulations.

Key Responsibilities:

1. Meat Cutting & Preparation:

Expertly cut, trim, and prepare various types of meat, including beef, pork, poultry, and lamb, to customer specifications or store requirements.

Portion, debone, grind, and package meats with precision and consistency.

Ensure all cuts are presented attractively and meet quality standards.
2. Inventory & Stock Management:

Monitor and manage inventory levels to ensure adequate supply and minimize waste.

Rotate stock to maintain freshness, using the FIFO (First In, First Out) method.

Assist in receiving and inspecting deliveries of meat products for quality and accuracy.
3. Safety & Sanitation:

Maintain a clean and organized workspace in compliance with health and safety regulations.

Follow all food safety protocols, including proper storage and handling of raw and processed meats.

Operate and maintain cutting equipment, knives, and tools safely and efficiently.
4. Customer Service:

Provide knowledgeable recommendations to customers on meat selections, cooking techniques, and portion sizes.

Take custom orders and ensure customer satisfaction with precision and professionalism.

Address customer questions and concerns in a friendly and helpful manner.
5. Team

Collaboration:

Work closely with other team members to achieve department goals and maintain smooth operations.

Assist with training and mentoring apprentices or junior staff.

Required Skills &

Qualifications:

Experience:

Proven experience as a Meat Cutter, with a minimum of 2-3 years in a professional setting.

Knowledge:
Comprehensive understanding of meat cuts, yield management, and food safety regulations.

Technical

Skills:

Advanced knife skills and experience operating meat saws, grinders, and other cutting equipment.

Physical Requirements:

Ability to lift up to 50 pounds, stand for extended periods, and work in cold environments.

Attention to Detail:
Strong focus on accuracy, cleanliness, and presentation.

Customer Service:
Exceptional communication and interpersonal skills.

Preferred Qualifications:

Certification in Meat Cutting or related training program.

Previous experience in a high-volume retail or wholesale meat environment.

Familiarity with specialty cuts or value-added products, such as smoked or marinated meats.

Work Environment:

This position requires working in a cold environment, standing for prolonged periods, and handling sharp tools and equipment. A safety-first mindset is essential.

Schedule:

Full-time or part-time with flexibility for weekends, holidays, and peak business hours.
