Minimum Qualifications: High school diploma or equivalent

Position Summary

This is skilled cooking work in the preparation of foods for a dining hall, cafeteria or snack bar. Work may involve either general preparation or cooking of a variety of foods or the specialized preparations of meats or vegetables. Responsibilities include maintaining neatness and cleanliness in food preparation and adhering to schedules. Assignments are received verbally and from prepared menus, with independence in the actual food preparation and processes.

General supervision is provided by a superior who checks work by results.

Hours can include nights, weekends, and holidays.

Knowledge, Skills, Abilities And/or Competencies
  • Considerable knowledge of the materials, methods and equipment used in large-scale food preparation.
  • Considerable knowledge of health hazards in food preparation and services and the precautionary measures necessary.
  • Some knowledge of food values and menu planning.
  • Ability to understand and follow written and oral instructions concerning food preparation and service.
  • Ability to coordinate and supervise the work of food service workers.
  • Ability to operate standard cooking equipment and to use kitchen and cooking utensils for large-scale food preparation.
Physical Demands
  • Work long hours standing and walking in a commercial kitchen.
  • Driving to perform related job tasks.

Duties/Responsibilities
  • Prepares a wide variety of meats, fowl, fish and vegetables for lunch and dinner; prepares breakfast dishes including eggs, bacon, and hot cereal; prepares stews, soufflés and similar dishes.
  • Operates standard cooking equipment such as mixers, steam cookers, toasters, choppers, refrigerators, baking ovens and stoves.
  • Supervises and participates in cleaning kitchens, refrigerators and storerooms; instructs and supervises workers assisting in food preparation.
  • Performs related work as needed.
