We're looking for a skilled Meat & Seafood Butcher to join a growing concept that's committed to quality, freshness, and exceptional guest experiences. This is a hands‑on role for someone who enjoys breaking down whole cuts, maintaining the highest quality standards, and helping build an outstanding meat and seafood program.

• Break down and fabricate whole fish, primal and sub-primal cuts of meat, and poultry.
• Portion steaks, chops, seafood, and specialty cuts to company specifications.
• Maintain exceptional quality, freshness, yield, and presentation.
• Follow proper storage, labeling, FIFO rotation, and food safety procedures.
• Minimize waste while maximizing product utilization.
• Prepare value‑added products including house‑made sausages, marinades, cured items, stocks, and specialty preparations.
• Maintain a clean, organized, and sanitary work environment.
• Assist in developing new cutting techniques, product offerings, and team training.

• 2+ years of professional meat cutting, seafood fabrication, or butcher shop experience.
• Experience breaking down whole fish and/or primal cuts of beef, pork, or lamb.
• Strong knife skills and attention to detail.
• Knowledge of food safety, sanitation, and proper product handling.
• Ability to work efficiently in a fast‑paced environment.
• Passion for quality, craftsmanship, and continuous improvement.
