About

the Role

The PRM Lead Production Technician supports the Operations Manager by overseeing daily slaughter and processing operations while serving as second-in-command for the facility. This hands-on leadership position ensures production goals, product quality, food safety, animal welfare, and regulatory compliance are achieved while providing guidance, training, and support to production team members.

Key Responsibilities
  • Serve as second-in-command and oversee operations in the absence of the Operations Manager.
  • Lead daily slaughter and processing activities from live animal handling through finished product.
  • Perform and oversee all phases of harvest and processing, including stunning, slaughter, fabrication, and processing.
  • Ensure humane animal handling and compliance with USDA, HACCP, SSOP, GMP, food safety, and sanitation requirements.
  • Coordinate daily work assignments, staffing, job rotations, and production priorities.
  • Monitor production flow, product quality, yields, and waste reduction.
  • Train, mentor, and support production employees on safety, quality, and operational procedures.
  • Troubleshoot production issues and coordinate with maintenance to minimize downtime.
  • Maintain production records, inventory, sanitation, and workplace safety.
  • Communicate production updates, concerns, and improvement opportunities to management.
  • Perform other duties as assigned.
Core Qualifications
  • High school diploma or equivalent required; additional technical or industry training preferred.
  • Minimum five (5) years of hands‑on experience in meat slaughter and processing.
  • Experience in a lead or senior production role preferred.
  • Experience working in a USDA-inspected facility with HACCP and food safety programs required.
  • Ability to work flexible or irregular hours as needed.
  • Ability to successfully complete required criminal and character background checks.
  • Ability to travel for required training and professional development.
  • Ability to successfully perform all essential job functions.
Essential Competencies
  • Strong working knowledge of slaughter, fabrication, meat processing, food safety, and regulatory compliance.
  • Ability to safely operate processing equipment and work in physically demanding, cold, and wet environments.
  • Demonstrated leadership skills with the ability to motivate, train, and develop employees.
  • Strong problem‑solving and decision‑making abilities in a fast‑paced production environment.
  • Ability to prioritize multiple responsibilities while maintaining quality and safety standards.
  • Excellent communication, teamwork, and organizational skills.
