Role Description
An Assistant F&B Manager is responsible for the management and profitability of the Lounge and F&B-related outlets. The Assistant F&B Manager will provide a personable, unique, and indulgent guest experience that ensures the highest standards of quality. The person in this position must have good communication skills, the ability to resolve conflicts, and a thorough understanding of Bunkhouse policies. An Assistant F&B Manager must develop and maintain the company’s culture, values, and reputation in the public eye and with all staff, guests, vendors, and partners.
All Bunkhouse employees must promote the Bunkhouse Vision and Core Values in all actions and decisions. Responsibilities will include:
- Adhere to all standards of operations, policies and procedures, manuals, training material, memos, and verbal instructions
- Support the Bars and F&B team in successful day-to-day operations, front-of-house and back-of-house as needed
- Resolve guest issues/feedback in a timely manner
- Monitor employee and patron activities to ensure liquor regulations compliance
- Serve as Manager on Duty (MOD) when the F&B Manager or General Manager is not on-site. Inspect supplies, equipment, and work areas to ensure efficient service and conformance to standards
- Ensure guests receive indulgent service by maintaining a properly staffed lounge
- Evaluate new products for usefulness and suitability
- Order and purchase equipment and supplies, and ensure quality and timely delivery of services
- Assist in serving duties, pre-bussing duties, scheduling parties or reservations, and accepting payments when needed
- Develop equipment maintenance schedules and arrange for repairs
- Train and supervise F&B employees
- Schedule F&B staff hours and assign duties and responsibilities per work requirements
- Demonstrate a working understanding of labor cost control through effective scheduling and proactive management
- Establish cost improvement objectives and implement action plans
- Implement inventory standards and procedures to consistently conduct an accurate inventory
- Ensure open lines of communication with staff, all departments, and upper management at all times via email, logbooks, meetings, etc., to ensure all needs of the hotel are met
- Maintain a high level of cleanliness and safety in the work area
- Ensure that all equipment is maintained in good, safe working conditions
- Maintain an increased awareness of safety issues throughout the property
- Keep abreast of safety and emergency procedures and OSHA requirements
- Attend relevant meetings
Qualifications
- High School diploma or general education degree (GED). College Degree preferred
- Two (2) years of related experience in the hospitality or service industry
- Valid and current TABC Certification
- Current Food Handler’s Certification
- Experience with or knowledge of inventory controls (i.e. food, beverage, kitchen supplies/utensils, food and beverage waste, and employee consumption)
- Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals
- Ability to speak effectively before groups of co-workers and sister property staff
- Ability to create documents in Excel and Word
- Ability to understand other computer programs (i.e. Point of Sale)
- Ability to apply concepts of math, including addition, subtraction, multiplication, division, and algebra, using whole numbers, common fractions, and decimals
