Inside Austin’s landmark hotel, The Driskill, MML operates a dynamic culinary portfolio. This role directly manages two of the hotel’s most beloved concepts:
1886 Cafe & Bakery: A bustling, iconic all-day dining favorite known for comfort dishes, classic breakfasts, artisan pastries, and warm neighborhood hospitality.
The Victorian: A two-level, Western-inspired watering hole blending Old West saloon heritage with English pub charm—featuring craft cocktails, heritage whiskeys, live music, and pub fare.
We are seeking a versatile, hands-on Food & Beverage Manager to oversee daily floor operations across both 1886 Cafe & Bakery and The Victorian. Reporting to the F&B Director, you will transition seamlessly between daytime cafe pace and vibrant nighttime bar energy—driving service execution, guest engagement, beverage flow, and team leadership across both venues.
The ideal candidate thrives in a high-volume, multi-outlet environment, balancing daytime coffee-and-breakfast precision with high-energy evening bar service.
Key ResponsibilitiesDual-Outlet Floor Leadership
Maintain an active floor presence, driving daytime service at 1886 Cafe and transitioning to oversee evening energy, live music, and bar flow at The Victorian.
Ensure MML steps of service, seating efficiency, food presentation, and beverage quality standards are strictly upheld in both venues.
Act as a primary face of the house, welcoming local regulars, hotel guests, and downtown visitors with genuine Texas warmth.
Address guest feedback with grace and speed, ensuring memorable recovery and repeat visits.
Manage beverage operations at The Victorian—ensuring proper cocktail execution, tap line care, whiskey stock, and live music flow.
Assist with weekly/monthly F&B inventories, pour cost management, waste tracking, and retail bakery/beverage ordering for 1886 Cafe.
Oversee POS management, daily shift cash drop reconciliation, labor scheduling, and FOH staffing allocations across both outlets.
Recruit, train, coach, and motivate servers, bartenders, baristas, hosts, and support staff.
Lead daily pre-shift meetings for both teams to align on specials, service focus areas, and high-volume expectations.
Enforce all food safety, sanitation, TABC, and Serv Safe compliance guidelines across both spaces.
Experience:
2–4+ years of restaurant management or beverage leadership experience in high-volume dining, high-traffic cafes, or dynamic bar/lounge environments. Hotel restaurant experience is a plus.Dual-Pace Versatility:
Comfortable managing early morning cafe/bakery operations as well as late-night bar service and live entertainment.Beverage & Food Knowledge:
Strong understanding of high-volume breakfast/lunch service mechanics, craft cocktails, spirits, beer, and coffee/cafe service.Leadership Style:
Energetic, floor-focused coach who leads by example alongside staff.Tech Literacy:
Proficiency with POS systems (Toast/MICROS), reservation engines, and inventory/scheduling platforms.Certifications:
Current TABC and Food Handler certifications required.
