The Food Service Manager II (Control Room Manager) duties includes the daily procurement of food and supplies needed by the Food Service Department. This includes receiving, storage and distribution of the food and supplies in a safe and sanitary manner. Plans, assigns, trains and supervises the work of others. May work extended hours, weekend or holidays. Assure competency-based training for the Food Service Department, training for orientation, annual retraining and in-service programs.
Assures all employees within the Department are up to date on continuing educational needs. This position will provide meal monitoring, supervise preparation and serving of meals to ensure proper food handling techniques and sanitation. Assist in the rotating Food Service Manager coverage. This position is under the supervision of the Director of Food Services and requires minimal supervision to allow for initiative and professional judgement.
Job Functions (EJFs)
- Attends work on a regular basis and may be required to work a specific shift schedule or, at times, even a rotating schedule, extended shift and/or overtime in accordance with agency leave policy and performs other duties as assigned.
- Monitors and complies with facility/departmental policies and procedures.
- Assure that all areas of the control room are running smoothly.
- Order food and supplies, essential to meet requirements of the Food Service Department.
- Oversees for receiving groceries from the vendor and checks for accuracy of the delivery as well as inspecting items for quantity, quality and temperature conditions.
- Oversees the storage of food and supplies utilizing FIFO and proper food safety regulations.
- Oversees the pulling of the food (thaw, frozen, storeroom carts) for distribution to the production area.
- Oversees the distribution of the food from production to service on the homes.
- Participates in Food Services staff training on safety rules and regulations, sanitary procedures, food preparation, food textures, portion control, operation of food service equipment using competency-based training. Assures all assigned employees are up to date on annual computer continuing education (I-Learns, Food Handlers and Food Protection Manager Courses, Management Training etc.)
- Ensuring that assigned staff participates in mandatory training in order to ensure staff competence and development.
- Assist with time keeping duties for assigned employees
- Completes daily, weekly or monthly reports, checklists and logs.
- Oversees the HACCP Program for Food Service.
