- Assist the Head Chef in producing food items according to instructions
- Ensure food hygiene practices are observed throughout the food chain
- Maintain HACCP compliance across the kitchen and all F&B outlets
- Ensure kitchen equipment is operating; report maintenance issues to the Head Chef
- Assist in training and developing junior kitchen staff and supervise the brigade
- Manage operational, quality, and administrative functions of the kitchen
- Provide food to F&B outlets and ensure compliance with legislation
- Respond to guest queries efficiently and positively
- Maintain high‑quality food storage and handling practices
- Contribute to menu creation incorporating guest feedback
- Ensure consistent production of high‑quality food across all hotel outlets
- Manage customer relations in the absence of the Head Chef/Executive Chef
- Support brand standards through team training and assessment
- Motivate and organise the kitchen brigade effectively
- Control costs while maintaining standards and improving profitability
- Assist other departments and maintain strong working relationships
- Comply with hotel security, fire, health and safety, and food safety legislation
- Report maintenance, hygiene, and hazard issues; be environmentally aware
