Certified Dietary Manager (CDM) Position Summary

The Certified Dietary Manager (CDM) is responsible for planning, organizing, directing, and supervising the dietary services department in accordance with federal, state, and local regulations, as well as facility policies and procedures. The CDM ensures that residents receive nutritionally balanced meals that meet physician orders, individual preferences, and therapeutic diet requirements while maintaining high standards of food safety and sanitation.

• Direct the daily operations of the dietary department.
• Ensure compliance with CMS, state, OSHA, and food safety regulations.
• Collaborate with the Registered Dietitian to implement and monitor therapeutic diets and nutrition care plans.
• Plan menus that meet nutritional standards and resident preferences.
• Oversee food purchasing, inventory, storage, and cost control.
• Supervise, schedule, train, and evaluate dietary staff.
• Ensure meals are prepared and served according to prescribed diets, portion sizes, and quality standards.
• Monitor resident satisfaction and address concerns related to food service.
• Maintain sanitation and infection prevention standards throughout the kitchen and dining areas.
• Conduct quality assurance audits and participate in Performance Improvement (QAPI) activities.
• Maintain required documentation and departmental records.
• Participate in interdisciplinary care conferences as needed.
• Ensure emergency food and water supplies are maintained according to regulatory requirements.

• Certified Dietary Manager (CDM), Certified Food Protection Professional (CFPP) credential required or eligible as required by state regulations.
• High school diploma or equivalent required; associate degree in nutrition, food service management, or related field preferred.
• Minimum of 2 years of dietary management experience in long‑term care, skilled nursing, or healthcare preferred.
• Knowledge of therapeutic diets, food safety regulations, and long‑term care requirements.
• Serv Safe Manager Certification preferred if required by state regulations.

• Strong leadership and team management skills.
• Knowledge of CMS regulations governing dietary services in skilled nursing facilities.
• Excellent communication and interpersonal skills.
• Ability to manage budgets, inventory, and staffing efficiently.
• Strong organizational and problem‑solving abilities.
• Proficiency with electronic health records and dietary management software is preferred.

• Ability to stand and walk for extended periods.
• Ability to lift up to 50 pounds.
• Ability to work in hot, cold, and fast‑paced kitchen environments.
• Frequent bending, reaching, and carrying.
