Director of Food & Beverage / Assistant Director of Food & Beverage Position Summary Broken Sound Club is seeking a passionate, knowledgeable, and service-driven Sommelier & Beverage Manager to lead and elevate the Club’s beverage program. This position is responsible for the strategic development, procurement, inventory management, financial performance, and service execution of all beverage offerings throughout the Club, including wine, spirits, beer, cocktails, and non-alcoholic beverages.
The Sommelier & Beverage Manager serves as the Club’s beverage expert, creating exceptional member experiences while supporting operational excellence and profitability.
Essential Responsibilities Beverage Program & Bar Operations Oversee the upkeep, implementation, and adherence of Standard Operating Procedures (SOPs) to ensure consistency, operational efficiency, and compliance with Club standards.
Develop and maintain beverage programs across all dining venues, banquets, and special events.
Curate wine, spirits, beer, and non-alcoholic beverage selections.
Maintain beverage menus, wine lists, and pairing recommendations.
Drive beverage innovation, retail wine sales, and member engagement through creative programming, educational experiences, and strategic beverage initiatives that enhance both member satisfaction and departmental profitability.
Monitor beverage trends and recommend new products, recipes, and service enhancements that align with member preferences.
Maintain comprehensive knowledge of all wine, cocktail, beer, and beverage offerings to effectively support associates, educate members, and enhance the member experience.
Lead the continued development and sustainability of the Club's Wine Society program
Wine & Member Experience Assist members with wine selections and food pairings.
Conduct wine tastings, educational seminars, and member experiences.
Develop and execute wine dinners, spirit tastings, and beverage-focused events.
Create memorable experiences through personalized and attentive service.
Build strong relationships with members through professional and engaging interactions.
Resolve member concerns promptly and professionally while exercising sound judgment.
Inventory & Cost Control Manage beverage inventory levels and purchasing processes.
Conduct beverage inventories and audits.
Monitor beverage costs, pricing strategies, and profitability.
Analyze sales trends and identify revenue opportunities.
Vendor & Purchasing Management Maintain relationships with distributors, wineries, breweries, and beverage suppliers.
Negotiate pricing and purchasing agreements.
Coordinate product tastings and vendor presentations.
Compliance & Safety Ensure compliance with all Club policies and applicable local, state, and federal alcohol service regulations.
Maintain health, sanitation, and safety standards throughout all service areas.
Ensure all associates follow proper beverage service procedures.
Promote a safe and organized work environment for members, guests, and associates.
Leadership & Team Development Train, develop, and coach bartenders, servers, and food & beverage associates.
Develop ongoing beverage education programs.
Demonstrate independent decision-making and proactively address operational challenges.
Identify service inefficiencies and implement solutions that improve the member experience.
Take ownership of issues through resolution while keeping leadership appropriately informed.
Remain calm and solution-oriented in high-volume and high-pressure situations.

Qualifications Certified Sommelier designation preferred.
Minimum 3 years of Food & Beverage leadership experience.
Strong knowledge of wine, spirits, beer, cocktails, and beverage trends.
Proficiency with Point-of-Sale (POS) systems.
Experience managing beverage inventories, budgets, and purchasing programs.
Excellent leadership, communication, and organizational skills.
Ability to work effectively under pressure while maintaining exceptional service standards.
Flexible availability including evenings, weekends, holidays, and Club events.
Private club, luxury hospitality, resort, or fine dining experience preferred.
Physical Requirements Ability to stand and walk for extended periods.
Ability to lift and carry beverage inventory up to 50-70 pounds.
Frequent bending, reaching, stooping, and movement throughout service areas.
Ability to work indoors and outdoors as operational needs require.
