Job Summary

The Catering Manager is responsible for the smooth, efficient management, operation and development of all catering outlets and associated catering activities within and connected to the site operation. This permanent role requires active participation in the Duty Management Team, with duties on weekends and evenings. The manager works under the Operations Manager and reports to the UK Director.

Key Responsibilities
  • Manage the smooth, efficient and profitable operation of all catering outlets and associated activities.
  • Ensure continuous delivery of a high degree of product quality and profitability.
  • Maintain an efficient, helpful service to customers, suppliers and stakeholders.
  • Develop commercial success by improving range, merchandising, presentation, stock control and value for money.
  • Ensure compliance with Food Hygiene, COSHH and Health and Safety regulations.
  • Order, prepare and present high‑quality fresh food for all outlets.
  • Maintain appropriate stock levels and readiness for opening.
  • Keep outlets clean and hygienic throughout the day and ensure proper close‑down procedures.
  • Provide catering for special functions, conferences, birthday parties and other out‑of‑hours events.
  • Develop and expand evening trading during the summer season.
  • In collaboration with marketing, develop, organise and manage corporate hospitality and function business.
  • Maintain consistent gross profit within budget and price goods to achieve profit targets.
  • Develop and manage relationships with suppliers, securing best price and service.
  • Control catering spend and turnover budgets, taking action to achieve targets.
  • Report performance to the Operations Manager and UK Director, suggesting improvements.
  • Oversee ordering of all food, beverages, consumables, cleaning equipment, sundries and POS materials.
  • Manage waste, portion control and prevent shoplifting; maintain accurate till and cash handling procedures.
  • Ensure compliance with alcohol licence regulations and responsible sale, supply and storage.
  • Supervise table turnover during peak periods to maximise covers.
  • Maintain accurate stock levels, conduct replenishment, source new lines and conduct supplier audits.
  • Implement promotions, specials and incentives to boost sales.
  • Ensure signage, menus and visitor information boards are clean, presentable and up‑to‑date.
  • Supervise outside terraces, ensuring safety and presentation.
  • Train, induct and develop catering staff, including motivation, welfare and performance.
  • Assist in recruiting, selecting, training and appraising catering staff.
  • Plan resources, delegate tasks and manage break rota scheduling.
  • Support the development of assistant managers and supervisors.
  • Enforce company policies, procedures and performance metrics.
  • Maintain supplier relationships, manage procurement, purchase orders and invoicing.
  • Operate and maintain the Total Control software package.
  • Ensure tills, equipment and software have service and support agreements.
  • Maintain temperature control, cleaning procedures and relevant records for all equipment.
  • Verify all staff hold required food hygiene certifications.
  • Handle general inquiries, administration and paperwork promptly.
  • Perform key‑holder duties and cover environmental or intruder alarm call‑outs.
Additional Duties
  • Perform any other reasonable duty as required by the Operations Manager.
