We are seeking a skilled and reliable Fish Cutter to join our seafood processing team. In this role, you will be responsible for preparing high‑quality seafood products by filleting, cutting, and portioning fish according to company standards. You will work in a fast‑paced, temperature‑controlled environment alongside a team that is committed to quality, safety, and efficiency. This position is ideal for someone who takes pride in craftsmanship, pays close attention to detail, and thrives in hands‑on work.

• Fillet, cut, and process whole fish into fillets and portioned cuts, with a focus on groundfish and salmon
• Assess seafood quality based on shape, texture, and smell to ensure only top‑quality product is processed
• Use knives, sharpening tools, and processing equipment safely and efficiently
• Maintain consistent product specifications in line with company standards
• Keep the cut room clean, organized, and free of debris or hazards
• Follow all food safety and sanitation procedures, including proper handwashing and equipment cleaning
• Adhere to FDA and company guidelines for seafood processing and production
• Comply with all safety protocols, company policies, and operational procedures
• Assist with additional tasks as assigned by supervisors

• Proven experience in fish cutting, filleting, and seafood processing
• Strong knowledge of seafood quality standards and handling practices
• Skilled in the use and maintenance of knives and cutting equipment
• Ability to work efficiently in a physically demanding role, including standing for long periods and performing repetitive tasks
• Capable of lifting and carrying up to 50 lbs
• Comfortable working in a cold, wet environment (35°F–40°F)
• Flexible availability, including early mornings and weekends
• Strong attention to detail and commitment to quality
• Reliable, safety‑conscious, and able to follow strict procedures and guidelines
