Fish Cutter

We are seeking a skilled and reliable Fish Cutter to join our seafood processing team. In this role, you will be responsible for preparing high-quality seafood products by filleting, cutting, and portioning fish according to company standards. You will work in a fast-paced, temperature-controlled environment alongside a team that is committed to quality, safety, and efficiency. This position is ideal for someone who takes pride in craftsmanship, pays close attention to detail, and thrives in hands‑on work.

• Fillet, cut, and process whole fish into fillets and portioned cuts, with a focus on groundfish and salmon
• Assess seafood quality based on shape, texture, and smell to ensure only top-quality product is processed
• Use knives, sharpening tools, and processing equipment safely and efficiently
• Maintain consistent product specifications in line with company standards
• Keep the cut room clean, organized, and free of debris or hazards
• Follow all food safety and sanitation procedures, including proper handwashing and equipment cleaning
• Adhere to FDA and company guidelines for seafood processing and production
• Comply with all safety protocols, company policies, and operational procedures
• Assist with additional tasks as assigned by supervisors

• Proven experience in fish cutting, filleting, and seafood processing
• Strong knowledge of seafood quality standards and handling practices
• Skilled in the use and maintenance of knives and cutting equipment
• Ability to work efficiently in a physically demanding role, including standing for long periods and performing repetitive tasks
• Capable of lifting and carrying up to 50 lbs
• Comfortable working in a cold, wet environment (35°F–40°F)
• Flexible availability, including early mornings and weekends
• Strong attention to detail and commitment to quality
• Reliable, safety-conscious, and able to follow strict procedures and guidelines
