About the Role

Our award-winning kitchen team have an exciting new opportunity for Commis Chef to join our Breakfast team. You will create exquisite dishes using locally sourced Scottish produce and be responsible for having your own section whilst gaining invaluable guidance and development within a multi outlet hotel kitchen.

In this role you will assist the Head Chef in the preparation and service of food ensuring that the highest standards are maintained at all times. Additionally, you will ensure that the kitchen areas designated, equipment and utensils are always kept clean and tidy to the Old Course Hotel standards.

Your responsibilities will include:

  • Prepare all foods necessary for service to the demonstrated culinary standards and to the quantities according to the forecast.
  • Prepare all foods, maintaining the established pace of service.
  • Prepare all dietary requirements in foods requested as part of our customer focus directives.
  • Ensure that foods prepared to not fall in the temperature danger zone during storage and preparation or service.
  • Sanitise all cutting boards and utensils after fabricating any raw meat, fish or poultry products.
  • Maintain the knife safety standards as viewed in the safety video during culinary department orientation.
  • Have a working knowledge of all equipment that is within your job duties and know how to assemble, disassemble and clean this equipment.
Essential Requirements
  • Solid knowledge of culinary terminology and techniques
  • SVQ 1 & 2 or an MVQ or equivalent qualification.
  • Basic competencies in breakfast cookery & vegetable preparations.
  • Basic competencies in meat, fish and poultry cooking.
  • Basic knowledge of stocks, soups and sauces.
Hours

Permanent, Full Time, 40 hours per week, 5 days out of 7

5am - 1:30pm

£27,616.38 per annum…
