Who We Are
L'Appartement 4F began in a tiny Brooklyn apartment during the pandemic, where founders
Ashley and Gautier Coiffard started baking croissants for their neighbors. That homegrown
project is now one of NYC top bakeries, known for our laminated dough, sourdough, and baguettes. In the evenings, our space becomes L'Apero, a French wine bar serving natural wines alongside bread, cheese, and classic dishes. We're a small, craft-driven team, and every person here plays a real role in what comes out of the oven.
The Role
We're looking for a Lead Baker to run our early-morning bread program: baguettes, sourdough,
and daily production. This is a hands-on leadership role, not a support position. You'll run the
floor on the Head Baker's 2 days off, own quality and pacing during shared shifts, and be the
person the rest of the team turns to when something needs a decision. As you grow with us,
there's real room to take on more of the croissant and viennoiserie program and build toward
Head Baker.
Responsibilities:
Responsible for bakery operations on the Head Baker's days off
Coordinating daily prep, baking, and quality control alongside the Head Baker on shared shifts
Leading the team in real time: delegating tasks, solving problems on the floor, keeping production on schedule
Daily communication with the Head Baker on progress, issues, and planning
Coordinating with our central prep kitchen on dough deliveries and special orders
Quality checks against recipe and technique standards, catching and correcting issues as they happen
Tracking inventory during your shifts and flagging shortages before they become problems
Keeping the kitchen clean, organized, and up to health code
Mentoring bakers on the team, building their skills and consistency
Bringing us ideas: workflow, product, anything you'd improve
What you bring:
3+ years professional experience in bread, pastry, or a related craft
Formal training in bread or pastry is a plus, not a requirement
Comfort moving fast in a physical, hands-on kitchen
Ability to work independently and lead a team
Availability for holidays and weekends, and to be on your feet for a full shift lifting 50+ lbs
18 or older, authorized to work in the US
Schedule:
6am-2pm, Sunday-Thursday. Full time, 40 hours a week. Immediate start.

Compensation and benefits
Hourly, $25.00-$28.00. Health, dental, vision, and life insurance. 401k. Commuter benefits.
