Kona Coffee Roasters is looking for an experienced and creative Bakery Manager to lead our Brooklyn-based B2B pastry operation. This bakery exclusively supplies pastries to our Manhattan coffee shops—there is no retail storefront. You’ll oversee a team of 4–5 employees, spending roughly half of your time in hands-on production and the other half on management, menu development, and quality control.
Must have exepreince in lamination (croissants/danish) and breads (sour dough, pullman and baguettes)
About half of our pastry production is sent to our stores before baking, so precision, preparation, and packaging consistency are essential. The other half is baked and finished in-house before delivery.
We’re looking for someone who combines technical pastry expertise with strong leadership skills—someone who can maintain consistency, inspire the team, and develop exciting new items within our Hawaiian and tropical flavor theme.
What You’ll Do
Lead and motivate the bakery team to produce high-quality pastries with consistency and care.
Manage all aspects of production, from dough preparation to packaging and delivery coordination.
Develop seasonal and specialty menus that highlight Hawaiian and tropical flavors.
Ensure consistent standards for both pre-bake and baked items delivered to our stores.
Oversee inventory, ingredient sourcing, and waste management to maintain efficiency.
Balance hands-on production with leadership and planning responsibilities.
Collaborate directly with ownership to align production schedules and menu goals.
Maintain a clean, organized, and fully compliant workspace that meets food safety standards.
Foster a supportive, communicative, and positive work culture.
Basic Qualifications
Proven experience in professional pastry or bakery management.
Strong understanding of laminated doughs, batters, and production processes.
Excellent leadership, organization, and communication skills.
Ability to manage multiple priorities and meet deadlines consistently.
Working knowledge of food safety and sanitation best practices.
Preferred Qualifications

Experience in B2B or wholesale pastry production.
Menu development experience, especially for seasonal or themed offerings.
Background in inventory, scheduling, and cost control.
Familiarity with Hawaiian or tropical flavor profiles.
Comfortable working in both hands-on and supervisory roles.
