Position: Supervisor - Mozzarella Production - 6pm - 6am

Supervisor/Mozzarella Production

Assists and manages the enhancement of both technical and financial performance of the department under the direction of the Mozzarella Production Manager and Assistant Manager. Direct supervision of production, sanitation, production specifications, product quality, food safety and security, administrative management and training of all personnel. Indirect supervision of milk receiving, inventories, and packaging of product.

Responsibilities

Analyze and evaluate information concerning daily operations and how these results affect plant performance.

Utilize the ZD manufacturing process control tool and enforce the on‑time accuracy of the information with staff.

Ensure that production specifications align with company standards and minimize loss of fat and protein, taking corrective action immediately when necessary.

Review regulatory charts, pasteurization and c.i.p., and production related charts daily; follow up on corrective actions needed.

Work closely with Quality Control Manager and Laboratory personnel on quality of raw materials, product specifications, and good manufacturing and sanitation practices.

Collaborate with Maintenance on equipment and plant maintenance issues.

Coordinate with RSPC staff to monitor inventories of milk, cream, starter, and all other materials required for production.

Coordinate with Mozzarella Packaging staff to ensure product meets specifications and is delivered on time.

Coordinate sanitation and housekeeping functions with Plant Sanitarian.

Assist the Mozzarella Production Manager / Assistant Mozzarella Production Manager with planning and scheduling manpower consistent with production requirements.

Qualifications

Dairy or related experience preferred.
Attention to detail and accuracy in work.
Strong written and verbal communication skills.
Knowledge of computer software.
Bachelor’s degree in Dairy Science, Chemistry, or related field preferred.
