Job Description:

Estimate amount and costs of supplies and food items

Maintain records of food costs, consumption, sales and inventory

Analyze operating costs and other data

Demonstrate new cooking techniques and new equipment to cooking staff

Create new recipes

Instruct cooks in preparation, cooking, garnishing and presentation of food

Prepare and cook complete meals and specialty foods for events such as banquets

Supervise cooks and other kitchen staff

Prepare and cook food on a regular basis, or for special guests or functions

Prepare and cook meals or specialty foods

Plan and direct food preparation and cooking activities of the restaurant

Plan menus and ensure food meets quality standards

Prepare dishes for customers with food allergies or intolerances

Supervise activities of sous-chefs, specialist chefs, chefs and cooks

Train staff in preparation, cooking and handling of food

Leading/instructing individuals

Ensure proper operation and maintenance of kitchen equipment

Oversee inventory management, ordering, receiving, storing, rotating food

Italian cuisine, understanding of high hydration Italian pizza dough

Experience with hand stretching and proofing pizza dough

Working with a pizza oven

Strong experience on sauté line, ability to work with multiple pans at once

Ability to control line during high volume rush

Ability to remain calm under high pressure and lead the kitchen team in a positive and constructive way.

Requirements

Education: Completion of high school is required

Red seal certification is a strong asset

Experience: Over 5 years of experience in the food industry is required.

Must have experience with Italian cuisine

Cook’s trade certification or equivalent credentials, training and experience are required

Ability to supervise up to 4 people

Salary: $38.00 hourly, 40 hours per week

Important Information: Flexibility on schedule is required. The regular schedule is 8 hours per day, scheduled between 10:00 am and 12:00 am. Work on weekends and holidays will be required.
