Sous Chef – Luxury Hotel | Cape Town
Kendrick Recruitment is currently seeking an experienced and highly skilled Sous Chef for a luxury hotel based in Cape Town. This role is ideal for a professional with a passion for fine dining, creativity, and maintaining exceptional 5-star culinary standards across both restaurant and villa operations.
Salary: R25,000 per month
Key Responsibilities:
Kitchen Operations:
• Run the kitchen effectively in the absence of the Executive Chef and Executive Sous Chef
• Ensure clear communication between the kitchen, restaurants, and villas
• Verify that each chef receives the correct orders for tables
• Check every dish leaving the kitchen for quality, presentation, quantity, and temperature
• Maintain 5-star standards in food preparation, presentation, and cooking techniques
• Work closely with the Food and Beverage department to achieve operational objectives
• Exceed guest expectations by delivering consistent, high-quality cuisine
• Assist in writing daily menus and make recommendations to guests
• Taste all food daily to ensure quality standards
• Take an active role in guest interaction, making menu suggestions when required
Villa Operations:
• Liaise with Reservations and Reception to prepare villas for guest arrivals
• Ensure villas are stocked, prepared, and operational at least two hours before guest arrival
• Maintain high food quality and presentation standards in villa service
• Assist HOD during events and ensure villas are service-ready
• Manage villa operational equipment and report maintenance issues
• Minimise wastage and maintain cleanliness in villa kitchens
• Ensure clear handovers for the next shift and remain available for guest requests
Stock Control:
• Ensure necessary stocks are available at the correct quality and quantity
• Cultivate relationships with suppliers and place daily orders
• Receive and check deliveries for quality compliance
• Monitor storage, rotation, and stock levels of perishables and operational stock
• Conduct monthly stock takes and ensure budgeted targets are met
• Minimise breakages and wastage in assigned areas

Qualifications &
Experience:
• Culinary qualification preferred
• Minimum 3 years’ experience in a similar role
• Experience in a 5-star hotel environment
• Fine dining experience essential
• Previous yacht experience or similar role advantageous
• Ability to work independently and host guests
• Good communication skills; travel experience advantageous
